Shaved Asparagus Salad
Salad:
1 lb asparagus, shaved and tips cut
2 cups arugula, lightly packed
1/4 red onion, sliced thinly
1/2 english cucumber, cut in half moons
Walnut Orange Vinaigrette:
2 Tb walnut oil
1 orange, juiced
1 lemon, juiced
1 tsp apple cider vinegar
1 tsp RAW agave or honey
2 cloves garlic, pressed
pinch sea salt
Parmesan Brazil Nut Cheese:
